What you can expect
We welcome you to our family farm in Cambo-les-Bains, where you can immerse yourself in our daily life as a producer of Espelette Pepper PDO. The workshop kicks off with a guided tour of the farm: we'll explore the pepper fields, where it all begins. You'll learn to recognize this plant typical of the Basque Country, its cultivation cycle, the essential actions, and what makes our terroir special.
We'll continue to the drying greenhouse, a peaceful place where the peppers, lined up on grills, slowly dry away from the wind, gradually releasing their first aromas. You'll discover how this natural drying process is a key step in preserving the pepper's taste qualities. Then, head to the oven, where the transformation continues. When the doors open, you'll be enveloped by the warm, toasted, slightly sweet scents of the chili pepper in full roasting. A strong sensory moment, where you'll understand all the richness and complexity of this exceptional product.
Then, we'll move on to the tasting: PDO powder, jelly, cream, or homemade jams… all accompanied by homemade lemonade. Something to awaken your taste buds and inspire your future dishes. We'll take the opportunity to share conservation tips (like properly closing the powder jar or keeping it away from light), as well as original recipe ideas. How do you spice up a vegetable dish, an omelet, a vinaigrette, or even a yogurt sauce? How can you add a touch of originality to a risotto, a sheep's cheese, or even a chocolate dessert? Espelette pepper can also enhance sweet preparations, bringing a slight warmth to ganaches, shortbread, or homemade compote.
Then, it's time for creation: you'll be invited to compose your own spicy and flavored oil, according to your tastes and your imagination. Pepper, candied lemon, thyme, berries… Choose your ingredients, mix them, test the combinations, and take home your personalized bottle. Add a “spicy” touch to your culinary creations and extend the experience at home!
Throughout the workshop, we'll share our tips for use, simple recipes, and everyday tricks to incorporate Espelette Pepper into your cooking, from starter to dessert.
